The Needs: Bacterial contamination causes annual spoilage of billions of liters of milk. In developed countries 1-3% of milk output is destroyed due to bacteriological contamination and in developing countries this percentage reaches 5-6% and more. Another challenge is improving the efficacy of cheese production. Approximately 10 liters of milk required to produce 1 Kg. of hard cheese and 6 liters are required to produce 1 Kg. of soft cheese.


The Solution: Both challenges can be addressed by adding a food-grade healthy compound to the milk, which reduces/inhibits biofilm formation, and at the same time increases the amount of cheese produced from the same amount of milk by 5-10%.
